=== CINNAMON RAISIN BREAD!
Original Recipe
- Add to a mixing bowl:
4 1/2 tsp of yeast (around two packets)
2/3 cup warm water
Let bloom for 5 minutes.
- Add to yeasty water:
1/3 cup sugar
1 cup warm non-dairy milk
1/3 cup vegan butter, room temperature
1/2 teaspoon salt
2/3 cup raisins
Mix to combine.
- Add to mixture in batches:
5 1/3 cup all-purpose flour
mixing after every batch until fully incorporated.
- Turn dough out onto a floured surface and knead for 8 minutes. After kneading, place dough in a clean, oiled bowl and cover with a kitchen towel for 1 hour.
- Once dough has risen, turn onto floured surface and split into two. Form into two balls and let rest for 10 minutes.
- Make cinnamon filling by mixing in a bowl:
1/3 cup sugar
1/4 cup brown sugar
2 tablespoons cinnamon
2 tablespoons vegan butter, melted
- Oil two bread tins.
- Flatten each dough ball into a long rectangle, the width of your bread tins. Evenly spread half of cinnamon filling over each rectangle, leaving room along the edge to seal dough. Roll each rectangle up, pressing seams flat, and put each dough log in a bread tin and cover with a kitchen towel.
- Let formed doughs rise again for 30 minutes.
- Once doughs are done with their second rise, set oven to 350 degrees.
- Bake doughs for 45 minutes or until golden brown.
- Let bread cool in tin before turning out and slicing. Enjoy!

-Tried it with higher hydration (and also added the applesauce from the original recipe). I don't know how to handle higher-hydration dough but it was a nightmare to knead lol, but holy cow it was so soft. It came out looking super jank, but it tasted better than the previous loaf (except where my poor handling skills really messed up the consistency haha).

- Fucking delicious. I couldn't quite get the roll right so it fell apart at the fillings, but it tasted great.
- The original recipe calls for applesauce but I didn't have any on hand so I just ommitted. Still tasted fine. Probably would have added a little more sweetness to the bread part.
